Orange-Honey Glazed Carrots

In the book To Kill a Mockingbird, there is a scene where a young boy pours molasses over his plate of food, the reason being that he was so used to his food having little flavor, and the molasses was the easiest, least expensive way to give the food a sweetness it otherwise wouldn’t have had.  

In a way, the same concept applies to these Orange-Honey Glazed Carrots. You might be trying to find a healthier snack, but everything tastes bland compared to the addictive qualities of sugar and chocolate. For those of you who might be trying vegetables but are having trouble getting past the lack of flavor, you might try this recipe. The perfect blend of honey, ginger, and pepper gives such a vibrant array of flavors and just the right amount of sweetness that you feel completely satisfied once you’ve finished. At that point, you still have enough room for a healthy dinner too!    

Ingredients for Orange-Honey Glazed Carrots:

  • 3 bunches of carrots, peeled
  • 2 tablespoons unsalted butter
  • 2 tablespoons Manuka honey
  • 2 teaspoons Kosher salt
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon grated orange zest
  • ½ cup freshly squeezed orange juice
  • ½ teaspoon freshly ground black pepper

Directions for Orange-Honey Glazed Carrots:

  1. Cut carrots diagonally in 1-inch slices. You should have about 5 cups of carrots.
  2. Place a ½ cup of water, the butter, Manuka honey, salt, and ginger in a large saute pan and bring to a boil.
  3. Add the carrots, cover the pan, and simmer over medium-low heat (depending on the stove’s power) for 5 minutes.
  4. Remove lid and continue to cook for around 20 minutes or until all the water has evaporated. You may want to raise the heat for the last 5 minutes.
  5. Add orange zest and orange juice to the pan, tossing with the carrots.
  6. Simmer uncovered for around 5 minutes until the carrots are al dente (tender but still resistant when you bite) and the sauce glazes the carrots.
  7. Add the pepper and another teaspoon of salt for taste if so desired.
  8. Yields about 4-5 servings. (Note: carrots may take longer to cook if you multiply the recipe for a larger group.)
  9. Enjoy!
