Balsamic and Manuka Honey Glazed Grilled Scallops

March is here and that means it is only a matter of time before we start to see some warmer weather. For many of us, this means it is time to pull the cover off the grill and have our first BBQ of the season. After such a hard winter, it is understandable that many people want to have a dinner party outside, even it means you have to wear a sweatshirt and fire up the propane heater!

For seafood lovers, there is nothing better than a perfectly cooked scallop. The problem is, for some reason, many people just cannot figure out how to cook them properly. In most cases, they just do not think they are done and overcook them until they are a hard, rubbery mess. Well, we are going to fix that today as well as giving you one of the best grilled scallops recipes you will ever taste!

Ingredients:

• 2 pounds of jumbo sea scallops

• 1 cup of balsamic vinegar

• ¼ cup of Manuka honey

• 1/8 teaspoon of chili powder

Directions:

• Remove tabs from scallops

• Place all scallops on a paper towel and then place another towel on top of the scallops

• Allow scallops to dry for about 15 minutes

• While scallops are done drying, fire up your grill to med/high heat

• When grill is ready, place scallops on grill

• Now this is the secret, cook scallops for a total of two minutes on each side, no longer

• Scallops should have those beautiful grill marks on them

• Remove scallops from grill and move inside to your stove

• In a small saucepan, bring balsamic to a low boil

• Add honey and chili powder (the chili powder offsets some of the sweetness and adds a small bite to the sauce, so you can eliminate this if you like). Combine ingredients and lower heat to medium and allow sauce to thicken while continuously stirring (this entire process should not take more than a few minutes).

• When sauce has thickened, lower heat to a simmer

• Place scallops into saucepan and finish cooking for one minute on each side (scallops should be completely coated in the sauce ).

*if you do not like or cannot get jumbo scallops, reduce cooking time on grill to about 90 seconds per side and reduce time in sauce to between 30-45 second per side (smaller scallops will cook much faster).
