While you will need an ice cream maker for this recipe (hand-crank or electric—the choice is yours), you’ll feel wholly satisfied by the sweetness and overall flavor of this treat, and, for those watching their sugar intake, you don’t even need to add tons of sugar just to get that sweetness you crave.

Combining some of your Manuka honey, milk, fresh basil, and so forth, this recipe will have you wondering why you ever thought to pay extra for those pricey name brands in the store. If you think this gelato is the homemade treat for you, then let’s get started.

Ingredients for Burnt Manuka Honey Gelato

  • 2/3 cup of Manuka honey
  • ½ teaspoon of lemon juice, preferably freshly-squeezed
  • 1 tablespoon of water
  • 1 ½ cups of cow’s milk
  • 2 egg yolks
  • 3 sprigs of basil, preferably fresh
  • ½ cup of mascarpone cheese
  • ½ teaspoon of salt

Directions for Burnt Manuka Honey Gelato

  1. To begin making your gelato, take a heavy-bottomed saucepan and combine the Manuka honey, the water, and the lemon juice, setting the mixture on simmer and allowing it cook for about 10 minutes. Then, take the mixture off the heat, setting to the side.
  2. Using another heavy-bottomed pot, pour in the milk and throw in your fresh basil sprigs, bringing this mixture to a simmer as well. Remove mixture from the heat, setting to the side for about 10 minutes, which will allow the flavor to fully steep.
  3. Now, take the basil out of the now-flavored milk and pour the milk into the Manuka honey mixture, whisking well until it is completely blended.
  4. Using a large bowl, whisk the egg yolks until the mix has a smooth and consistent look to it. Pour the Manuka honey-milk mixture slowly into the egg bowl, return it to the heavy-bottomed pot, and cook it on a low heat flame for about five minutes. Make sure you stir consistently throughout.
  5. Once you have completed this task, strain the mix through a sieve into a baking dish, and then refrigerate till it has set.
  6. Finally, take your hand-crank or electric ice cream maker and churn the mixture into gelato, serving fresh or at your discretion.
