How to Make Honey and Ginger Biscuits

During the fall and winter months, ginger biscuits are the perfect evening treat with your cup of coffee, tea, or hot chocolate. And, since we love honey, we are going to add some Blue Borage honey to this recipe to make these cookies a little extra special.

The problem with most standard biscuit recipes is they are packed with mounds of sugar. By using the Blue Borage honey, we are cutting the sugar intake dramatically with a nice scoop of the much healthier honey.

Ingredients:

  • 125 grams of Blue Borage honey
  • 225 grams of self-raising flour
  • 100 grams of caster sugar (a little extra if you want to sprinkle some on top of the biscuit)
  • 2 teaspoon of bicarbonate of soda
  • 1 teaspoon of mixed spice
  • 1 teaspoon of ground ginger
  • ½ teaspoon of ground cinnamon
  • Stick of butter (for greasing)

To make the biscuits:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Prepare a large baking tray by greasing it with the stick of butter
  3. Combine flour, bicarbonate soda, salt, and spices in a large bowl
  4. Sift the ingredients, then add sugar and mix again
  5. Add the honey to the mix, then add it to the flour, using your fingers to rub it in (the mixture should resemble bread crumbs when you are done)
  6. Continue to mix by hand until the mixture has been molded into a dough
  7. Roll the dough into small balls and place on baking sheet
  8. Flatten the dough with the back of a fork and, if desired, sprinkle a small amount of the sugar on top of the dough balls
  9. Bake biscuits for ten minutes
  10. Remove cookies from sheet and place on cooling rack for 10-15 minutes to cool off before serving

The addition of the honey to this recipe will more than likely give you a texture to your dough (see step 5) that you may not have seen before when making cookies, but we promise you they will turn out fine.

You can also use Manuka honey for this recipe, but we recommend using Blue Borage, as it is far better to cook with than regular Manuka honey.
