Manuka Honey Berry Waffle Sandwich

If you’re looking for a fun way to spend breakfast with your kids, nothing will get them more excited than homemade waffles covered with berries and the best syrup they won't get anywhere else. Even if you don’t have kids, this Manuka Honey Berry Waffle Sandwich is meant to cater to everyone, and it surely does do just that! You’ll feel like a kid when you experience this sandwich for the first time.

Some of the best memories we can have from our childhoods involves fresh waffles, but now you can capitalize on those happy recalled images by adding Manuka honey into the mix for that extra richness very few other foods can provide. From your favorite chosen berry, the two fluffy waffles clasping those berries together for the sweetest bite, and then the Manuka honey syrup, this waffle sandwich will be a recipe you’ll have memorized—just for emergency waffle sandwich needs!

Ingredients for Manuka Honey Berry Waffle Sandwich

½ cups fresh berries, divided

1 tablespoon butter

1/3 cup Manuka honey

For the waffles:

3 eggs

2 2/3 cups all-purpose flour

2/3 cup vegetable oil

1 1/3 tablespoons white sugar

5 1/3 teaspoons baking powder

1/3 teaspoon salt

1/3 teaspoon vanilla extract

Directions for Manuka Honey Berry Waffle Sandwich

  1. For this recipe, you may use pre-packaged frozen waffles, but you can also make your own if you have a waffle iron.
  2. Preheat waffle iron. Beat eggs in a large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt, and vanilla just until smooth.
  3. Spray preheated waffle iron once it’s ready with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown, and then set aside while keeping it warm (toaster oven or very low heat in oven).
  4. Puree ½ cup berries of your choosing (raspberries, strawberries, blueberries, etc.) in a blender or food processor. Set aside.
  5. In a small saucepan over medium heat, melt butter. Add Manuka honey and bring to a boil. Simmer 2-3 minutes, and then add berry puree. Continue to simmer 2-3 minutes more until syrup thickens slightly. Set honey syrup aside and keep warm.
  6. For each serving, place 2 waffles on plate. Top 1 waffle with ¼ cup fresh berries. Drizzle with ¼ syrup, and top sandwich with remaining waffle.
  7. Recipe yields 4 servings, 2 waffles apiece. Now, go ahead and enjoy your waffle sandwich for breakfast (or lunch or dinner—either will do!)
