Manuka Honey Cranberry Relish

November 28, 2018

Manuka Honey

If you’re familiar with the traditional walnut and orange cranberry relish, it’s possible you may not want to change something you already enjoy. However, if you’re among those who also enjoy trying new things every now and then, you might want to check out this recipe for Manuka honey cranberry relish, which offers the right kind of twist with the inclusion of apricots and roasted almonds.

You may not have oranges with this recipe, but, fortunately, it has another ideal kind of orange fruit to complement the strong flavor the cranberries have. The added cinnamon also brings an earthy, sweet tone to this relish, and it will have your mouth watering before you know it! You should have about ten servings with this dish, making it perfect for larger gatherings and parties.

Ingredients for Manuka Honey Cranberry Relish

  • 3 cups (or 12 ounces) of fresh cranberries
  • 2 tablespoons of sugar
  • 1/4 cup of Manuka honey
  • 3/4 cup of dried apricots, finely chopped
  • 1/2 teaspoon of ground cinnamon
  • 3/4 cup of unsalted, roasted almonds, chopped

Directions for Manuka Honey Cranberry Relish

  1. To start, place the fresh cranberries, the sugar, the Manuka honey, and the cinnamon into a blender or a food processor.
  2. Pulse the ingredients until everything is chopped (preferably not overly fine), and then taste. If needed, stir more Manuka honey in to get the taste you want.
  3. Now, stir the apricots and the almonds into your cranberry mixture. You should have about ten servings in total.
  4. From here, you can refrigerate the relish for a maximum of 24 hours prior to serving. If you pull the relish out and the liquid has separated, it just needs a quick stir. You should probably avoid storing this relish for more than one week after initially making it, as it may spoil beyond that time.
  5. Note: If the apricots you’re using are hard, you can use boiling water to soak them between five and ten minutes approximately before draining the water and chopping the apricots up.
  6. If you’re looking for possible ingredient substitutes, pecans, cashews, or walnuts could work just as well as the almonds. Instead of apricots, you can try other dried fruits, such as golden raisins, dried cranberries, or dates.
