Grilling can appear challenging to those who have never tried it before, and it is a process you need to pay close attention to, but if you have a thermometer on hand to monitor the chicken’s inner temperature and follow our instructions closely, there’s no need to feel worried about trying out a grilling recipe for the first time.

Ingredients for Manuka Honey, Lemon Pepper Chicken

  • One 3 ½ to 4-pound chicken, bisected, with skin and bone-in legs and breasts
  • 2 teaspoons of black pepper, freshly ground and divided
  • 4 teaspoons of kosher salt
  • 1 ½ lemons
  • Vegetable oil
  • 1 tablespoon of Manuka honey
  • 4 tablespoons of butter, unsalted

Directions for Manuka Honey, Lemon Pepper Chicken

  1. To begin, sprinkle the entire chicken with salt as well as 1 ½ teaspoons of black pepper. Allow it to sit at room temp for about one hour.
  2. In the meantime, prepare your grill for a medium heat, brushing the grate with vegetable oil. Slice your ½ lemon into thin rounds. Heat the Manuka honey and unsalted butter in a saucepan until the butter has melted and started foaming. From there, remove the mixture from the heat before adding the lemon slices.
  3. With that preparation complete, grill the chicken, with the skin side facing down, until the skin has charred lightly and can be removed from the grate without any tearing, which should around six minutes.
  4. Now, turn the chicken over, brushing it lightly with the lemon-honey butter. Cover the grill and keep grilling the chicken, brushing it with the lemon-honey butter in roughly five-minute intervals or until a thermometer inserted in the densest area of breast meat reads 150 degrees Fahrenheit, which should take between 25 and 28 minutes.
  5. Right before the chicken is completely ready, cut the whole lemon into fourths and grill them, with the cut sides facing down, until they have softened and charred, which should take between six and eight minutes. Move the lemons and chicken to a ready cutting board and let them rest for 10 minutes prior to carving up the chicken.
  6. Before serving, squeeze the grilled lemons onto the chicken while also sprinkling on the remaining ½ teaspoon of black pepper.
