So, full disclosure… I am a truffle junkie! Give me a box of Godiva truffles and you won’t hear from me for the rest of the day, at least until I start moaning from a stomach ache. Luxuries like that are no longer a reality, though, because we are all being forced to hunker down due to the coronavirus pandemic. So, instead of buying a $100 box of truffles, we are going to make some peanut butter and Pohutukawa honey truffles that will have your eyes rolling in the back of your head the moment you take the first bite.

Now, you can use Manuka honey if you like for this recipe, especially the UMF+ honey, because that caramel-like flavor would be delicious. I am choosing the Pohutukawa honey here because of the slightly salty flavor that works so well with the peanut butter here as well as the Pohutukawa being significantly cheaper than the UMF+ honey.

Ingredients Peanut Butter and Pohutukawa Honey Truffles:

  • ¼ cup oats
  • ½ cup natural peanut butter
  • ¼ cup Pohutukawa honey
  • ½ t vanilla
  • 2-3 T dried, shredded coconut
  • Optional – salt (personally, I don’t use this because of the flavor of the Pohutukawa honey)

To Make Peanut Butter and Pohutukawa Honey Truffles:

  1. Using a blender or food processor, pulse the oats for about 30-45 seconds (should be of flour consistency)
  2. Is a medium-sized mixing bowl, combine peanut butter, honey, and oat mixture (add salt as well if you are using it)
  3. Pinch of pieces of the mixture to form one-inch balls
  4. In a small bowl, add coconut
  5. Roll each bowl in the dried coconut until fully coated
  6. Place truffles in the refrigerator for at least 30 minutes before serving

Now, if you want to get a little more creative, if you have an injector, you can add a little more honey to the center of the ball before rolling in coconut to create a gnash-like honey center that will rival anything you get from Godiva.

Without the honey center, these truffles are about 75 calories each as well as having about 8 grams of carbs, so don’t overdo it, but do enjoy!
