Quinoa Encrusted Salmon with Manuka Honey and Pecans

For many of us, the moment someone talks about healthy eating the flavor aspect of recipes seems to go out the door. All those things that we love and add flavor to a dish are usually on the hit list that the “experts” tell us to stay away from. That is far from the case here, as we have a combination of ingredients that are going to create a flavor explosion as well as being VERY healthy.

Salmon is, by far, one of the healthiest food items you can eat today. Here are just a few of the major benefits of eating salmon:

  • Major source of protein
  • Major source of B vitamins
  • High in potassium
  • Contains astaxanthin, an antioxidant
  • Can potentially reduce risk of heart disease
  • Helps to fight inflammation

In this particular recipe, the combination of the Manuka honey with the pecans is very complementary and only adds to the natural flavor of the quinoa.

Ingredients:

  • 1t olive oil
  • 1t Dijon mustard
  • 1t Manuka honey
  • 1T + 1t cooked quinoa
  • 1T + 1t crushed pecans
  • 3 whole pecans
  • 1t chopped parsley
  • 2 lemon wedges
  • Salmon filet
  • Salt and pepper to taste

To make:

  1. Preheat over to 400 degrees Fahrenheit
  2. In a small bowl, combine olive oil, mustard, and honey
  3. Mix ingredients together and set dish aside
  4. In a small bowl, combine quinoa, pecans, and parsley
  5. Mix ingredients together and set dish aside
  6. Line a baking pan with parchment paper and brush with olive oil
  7. Place salmon filet on paper, then brush generously with honey mixture
  8. Add salt and pepper to taste
  9. Top salmon with quinoa mixture until the entire surface is covered
  10. Place in oven and cook 10 minutes for every inch of thickness of the salmon filet
  11. Remove from oven and top with pecans, then garnish with lemon wedges and parsley
