While many of us enjoy fried foods, they do have a bit of a taboo on them these days. This isn’t completely unwarranted, but abandoning these foods entirely doesn’t need to happen either, with moderation being the key to enjoying them without overdoing it. If you’re interested in trying out a fried food recipe, you’ll want to check out these corn fritters with hot Manuka honey!

This dish will require a Dutch oven large enough to accommodate your fritters, wooden skewers as well as an extensive ingredient list, but at the end of all the preparations and the cooking, you’ll have a dish worthy of breaking this so-called “taboo.” If you’re ready, let’s get started on those fritters!

Ingredients for Corn Fritters with Hot Manuka Honey

  • 1 1/4 cups of all-purpose flour
  • 1/4 cup of granulated sugar
  • 1 1/4 cups of fine yellow cornmeal
  • 1 1/2 teaspoons of Kosher salt
  • 1/2 teaspoon of cinnamon
  • 1 1/2 teaspoons of baking powder
  • 1 cup of milk, whole
  • 2 large eggs, whisked
  • 1/4 cup of melted butter
  • 1 jalapeno, finely minced and seeded
  • 1/4 cup of scallions, finely sliced (green and white parts only)
  • 1 1/2 cups of corn kernels, fresh
  • 1 hotdog, diced (optional)
  • Manuka honey (for serving)
  • Red chili flakes
  • 6-inch skewers, wooden

Directions for Corn Fritters with Hot Manuka Honey

  1. Total Time: 15-30 min. Yield: 6
  2. Using a large Dutch oven on medium heat, you need to add between one and two inches of canola oil, heating to 350 degrees Fahrenheit. Line paper towels on a plate before setting to the side.
  3. Using a large-enough bowl, add your flour, the sugar, the yellow cornmeal, the Kosher salt, the cinnamon, and the baking powder, mixing together until well blended.
  4. In another bowl, add your milk, the eggs, and the melted butter, whisking together to combine. Add the wet mixture to your dry ingredients before folding in the scallions, the jalapeno, the corn kernels, and the hotdog pieces if you choose to use them.
  5. As you’ll be working in several batches, mold your batter into balls, using a smaller ice cream scooper or a tablespoon measure. Drop your fritters gently into the ready hot oil. Fry until the fritters develop a golden-brown color and have cooked through, which should take between three and five minutes.
  6. Move the fritters to your prepared plate, lightly seasoning them with salt. Set the fritters onto the wooden skewers before drizzling them with Manuka honey, which you can mix red chili flakes into to make into a spicy honey. Serve immediately while warm.
