Grilled Lamb with Manuka Honey Dressing

Spring and summer are when the BBQs break out and everyone starts throwing down burgers and ribs. However, and obviously, you cannot eat like that all summer. When you want to enjoy the flavor of grilled meats but also want to watch your calories, salads with grilled meats are a great way to go.
This recipe gives you all the flavor you need as well as keeping the overall dish fairly light. Adding Manuka honey gives it even more flavor and will have you convinced you are eating a dish that is far more calorie intensive than it actually is.
Ingredients:
- Four lamb leg steaks
- One packet of crispy fried noodles
- ¼ pound chopped macadamia nuts
- 2T roasted sesame seeds
- ½ bunch coriander (picked, washed, dried)
- ½ bunch mint, (picked, washed, dried)
For the marinade
- 1T vegetable oil
- 1T soy sauce
- 1T Manuka honey
- 1T minced ginger
- 1t sesame oil
- Pinch of finely ground white pepper
For the dressing
- 2T vegetable oil
- 2T lime juice
- 1T Manuka honey
- 1T soy sauce
- 1t sesame oil
- Pinch of finely ground white pepper
To Make:
- Trim excess fat from lamb steaks (be sure to leave a little on the meat)
- In a medium sized mixing bowl, combine all marinade ingredients
- Dip lamb steaks in marinade to ensure they are fully covered with marinade
- Transfer steaks to a lined baking sheet
- Brush steaks with remaining marinade
- Cover and refrigerate for no more than four hours, but at least 30 minutes
- In a second mixing bowl, combine all dressing ingredients and put to the side until needed
- Remove lamb steaks from fridge
- Preheat grill on medium heat
- When steaks are down to room temp, place them on grill and cook for about three minutes on each side (cooking until each side has the char marks of the grill, but make sure the outside not burnt – steaks should be cooked to medium rare for best flavor)
- When steaks are done cooking, remove from grill and allow to rest about five minutes
- In a large mixing bowl, combine noodles, nuts, and torn herbs
- Slice lamb in long slices and add to bowl
- Add dressing mixture to bowl as well as half the sesame seeds
- Toss the salad mixture and place on individual plates, top with remaining sesame seeds
