Waffles with Honey Cream and Grilled Peaches

For those who love breakfast more than any other meal of the day—and love trying new things for themselves or their family—these homemade waffles with honey cream and grilled peaches are a surefire way to start the day off right. Using homemade, subtly orange-scented batter, specialized and sweetened cream (thanks to Manuka honey), and deliciously grilled peaches, this meal requires a few steps and a little time, but the ease with which it takes to go through all the steps and get to the perfect reward of warm waffles with unique toppings almost can’t be believed.
This batter makes about 12 waffles, and the time to make them and customize the cream and peaches can be cut down significantly in the morning if you make the batter the night before. Well, let’s get started on that breakfast!
Ingredients
Waffles:
1 cup and 2 teaspoons plain flour
½ teaspoon salt
3 teaspoons baking powder
½ teaspoon ground cinnamon
2 eggs, separated
1 and 3/4 cups milk
1 orange, finely grated zest
6 tablespoons and 2 teaspoons butter, melted, and extra for greasing
Peaches:
6 ripe golden-fleshed peaches
3 tablespoons butter, melted
½ teaspoon vanilla extract
2 tablespoons Manuka honey, extra to drizzle
Cream:
1 and 1/4 cup cream
1 teaspoon vanilla extract
1 tablespoon Manuka honey
Directions for Waffles with Honey Cream and Grilled Peaches
- To make the waffles, sift the flour, baking powder, salt, cinnamon, and sugar in a well-sized bowl.
- Lightly beat the egg yolks with the milk and add the mixture to the dry ingredients and with the orange zest, mixing it all into a smooth batter. Then, stir in the butter.
- Beat the egg whites into stiff peaks, and then fold them into the batter. You can make the waffle batter a few hours before it is needed—just cover the batter and keep it in a cooler place.
- For the peaches, cut them in quarters or, depending on the size, into eighths, discarding the stones. Combine the butter, the Manuka honey, and the vanilla. Add in the sliced peaches and then toss it to coat.
- Oil down a preheated grill pan or barbeque and set the peaches with the cut side down. Cook for 3-4 minutes until the peaches are caramelized. Turn them and repeat the process on the opposite side.
- To make the honey cream, take the cream and beat it until it starts to thicken. Then, add the Manuka honey and vanilla and beat until the cream thickens.
- When the dish is ready and fit to serve, cook the batter in a waffling iron or pan, making around 12 waffles and preserving their warmth inside the oven while working.
- Serve the waffles with a solid dollop of honey cream, a serving of peach slices, and a good drizzle of Manuka honey. Enjoy your waffles with honey cream and grilled peaches!
