Homemade Chocolate with Raw Honey

This time of year, candy is a regular treat. If it is not being put on the table during holiday gatherings, it is often given as a gift. The problem, though, is that too much chocolate can lead to sugar overload. While we are not saying overloading on this homemade chocolate would be a good idea, it is a far better option, in moderation, than just about anything you will find on the shelf in your local store.
When you are making this chocolate candy, have some fun with it! You can use a variety of shapes with molds you can readily find at local stores and on the internet to reflect the appropriate holiday.
Ingredients:
- ½ cup of cocoa powder
- ½ cup for coconut oil (can substitute cocoa butter, but change recipe to ½ c cocoa butter and 1/3 c cocoa powder)
- 3 T raw honey
- ½ t vanilla extract
To Make:
- Combine coconut oil and cocoa powder
- If using cocoa butter, you will need to warm up cocoa butter in a double boiler before combining with cocoa (allow to cool to 90 degrees before next step)
- Stir in raw honey and continue to stir until well combined
- While stirring, do so gently so as not to add “air” to the mixture
- Stir in vanilla extract and continue to stir mixture until all ingredients are well combined
- When all ingredients are well-combined, the chocolate mixture should appear to be very smooth
- At this stage, you can use a mold to shape the candy in any form you that you desire for the holiday
- Place molds onto a baking sheet lined with wax paper
- Once the chocolate has become completely solid, it can be removed from molds
- The thicker the chocolate, the longer this will take
