Honey Butter Corn on the Cob

Is there anything that screams summer like corn on the cob? Now, I don’t know about you, but corn on the cob is something we make at virtually every BBQ during the summer. It is the best time of year for corn, and if you can get white corn on the cob, forget about it!
Now, if you eat that much corn, you are bound to get a few clunkers throughout the summer. We have all been there. The corn just tastes a little dry or does not quite have the sweetness from a prior batch. When you use a honey butter bath while cooking your corn, that will never be a problem again!
One of the reasons I really like this particular recipe is because it not only sweetens the corn, it ensures the natural sugars in the corn are drawn out as well. Simply put, you will be hard pressed to find a better way to make corn on the cob once you have tried this recipe.
Honey Butter Bath Ingredients:
- 4C water (may need more depending on the size of the pot)
- 1C milk
- 1 full stick unsalted butter
- 1/2c raw honey
- 1t red pepper flakes
- 1t kosher salt
- 1T sugar
- Shucked and halved corn (this recipe should fit six ears of corn comfortably)
- Optional – 2T Old Bay Spice (great to use when having a crab boil)
To make:
- Fill a large pot with water and bring to a boil
- Turn to medium heat and add milk, butter, honey, red pepper flakes, salt, and Old Bay (if using).
- Stir well to ensure all ingredients are mixed
- Reduce heat to medium and add corn
- Allow the corn to cook for about eight minutes
- Remove from bath and serve
Another great aspect of this recipe is most of your diners will never mess up that stick of butter you have in your fridge. This is good enough to eat right out of the pot and if anyone adds anything else to it, you just may have to take that corn right out of their hands!
