How to Make Almond Honey Brittle Biscuits

Brittle… a time-honored favorite. And these brittle biscuits combine one of our favorite nuts with the delicious taste of Blue Borage honey, the perfect substitute for regular honey when you are cooking.
This particular recipe also incorporates caramelizing the sugars to give the cookie a very unique appearance compared to regular cookies (think crème brulee). The ingredients as well as the technique will create a rich, sweet cookie that will have you constantly reaching for the next one.
Ingredients:
- 1 tablespoon unsalted butter
- 1 tablespoon double cream
- 5 ¼ tablespoons Blue Borage honey
- 2 ½ tablespoons caster sugar
- 1/8 teaspoon table salt
- Small squeeze of lemon juice
- 5 tablespoons flour
- 7 tablespoons slivered almonds (just under a half cup)
To make the biscuits:
- Melt butter in a small saucepan.
- When butter is melted, fold in cream, honey, sugar, salt, flour, and lemon juice (just a dash).
- Continue to stir until all ingredients are combined, then add almonds.
- Spread the mix out on wax paper lined baking sheets, one teaspoonful per cookie. (The mix will spread out while it is cooking, so leave ample space on the baking sheet for them to spread out.)
- Bake the cookies at 350 degrees for seven minutes.
- Remove from oven and allow to cool before serving.
To make this a little more appealing, you can serve the cookies while still warm with a scoop of ice cream. They are also ideal to serve with tea in the morning.
