Refreshing Summer Mocktails with Raw Honey

Alcohol promotes dehydration, and we don’t want all that work you have been doing over the fall and winter to go to waste. But, we also don’t want you to miss out on those great evenings out on the deck when everyone else is tossing back a cold one. Rather than undo the progress, we found some great raw honey mocktails to enjoy so you can keep that healthy train rolling all summer!
Raw Honey & Blackberry Mint Mocktails
Blackberries are one of my favorite fruits because they are sweet, but not overpoweringly sweet. This mocktail can actually be used in place of your evening smoothie on those days you have everyone over for an evening pool party.
Ingredients:
- ¼ cup of raw honey
- 8 fresh blackberries (a few extra to use for your garnish)
- 12 mint leaves
- 1 lemon (juiced)
- ½ cup water
- 2 cups seltzer or carbonated water (I like to use a flavored sparkling water to add even more flavor to the drink)
To make the drink:
- Muddle 8 blackberries, 8 mint leaves, and raw honey in a cocktail shaker until well blended together
- Add flat water and lemon juice, then shake well
- Strain into two Collins glasses filled with ice
- Top each drink with one cup of the carbonated water
- Garnish with two mint leaves and blackberries
Raw Honey Limeaid Mocktails
This is a perfect mocktail because anyone wanting to drink alcohol can add a little tequila to it for a Margarita or some vodka for a hard limeaid.
Ingredients:
- One lime, juiced
- Carbonated water
- 7 teaspoons of raw honey
To make the drink:
- In a shaker cup, stir honey into lime juice until the honey has dissolved. If the honey is still too thick, add some flat water and continue to mix.
- Add ice to mixing cup and shake well
- Strain into Collins glass filled with ice
- Top with carbonated water and garnish with lime slice
Sparking Lemon Honey Cider
We know there are occasions that call for the bubbly, so we want to make sure you can hoist a class of mock champagne to toast with the rest of your friends
Ingredients:
- 2 cups non-alcoholic sparkling cider (refrigerated)
- 2 teaspoons flat water
- 2 teaspoons of raw honey
- 2 lemon wedges
To make the drink:
- In a small ball, combine honey and water. Stir until combined.
- Warm in microwave for 20 seconds to turn mixture into a simple syrup (depending on strength of microwave, may need to add a few seconds)
- Remove from microwave and allow mixture to cool in refrigerator
- When mixture has cooled, squeeze lemon wedge into bottom of champagne glass, then add the simple syrup
- Add one cup of sparkling cider to each glass and garnish with lemon rind
